The Pork Neck Bone Broth with Lotus Root Recipe
This delicious bone broth recipe is great any time of the year and a great alternative to the traditional broth. Before you prepare the bone broth, you will need the following ingredients:
3 pounds of lotus roots, peeled then sliced
2 pounds of pork neck bones
1 dried squid
3 pieces dried tangerine peel
20 dried jujube dates
2 tablespoons of rice vinegar
6 dried oysters
6 dried scallops
12 dried mushrooms (black)
1/4 cup aduki beans


Prepare the broth by soaking the tangerine peels, beans, and mushrooms in water for four hours. In a bowl, soak the squid, oysters, and scallops in water for two hours. When ready, drain off water of soaking ingredients, then place the pork neck bones in a pot of water covering bones. Bring to boil, turn down heat, then simmer. Add rice vinegar and cook three to four hours.

Add to the mix the beans, mushrooms, scallops, squid, oysters, tangerine peels, and dates. Simmer for one additional hour, then add lotus root slices and boil. Reduce to simmer and cook one more hour. Serve hot!

The Winter Bone Broth and Vegetable Soup Recipe
This nutritious bone broth recipe is delicious to serve with any meal or a standalone. Before you prepare the bone broth, you need the following ingredients:
2 pounds of bones (beef, chicken, or lamb), chopped into pieces
2 tomatoes, peeled and seeded, then halved
2 sticks of fresh celery, peeled then cut in half
2 carrots, peeled then cut in half
5 sprigs of parsley
1 teaspoon of black peppercorn
2 small potatoes, peeled then cut in quarters
3 garlic cloves peeled
1 onion, peeled then cut in quarters
2 tablespoons of balsamic vinegar
sprinkle of salt

Begin this winter bone broth recipe by preheating the over to 400 degrees Fahrenheit. Rinse the bones and place in a foil-lined large tray. Roast those bones uncovered until they brown on all sides, turn every 30 minutes. (should take 2 hours total depending on bone quantity)

Fill stockpot with one and a half quarts of cold water, enough to cover all the bones after adding to pot. Bring the water to a boil, then turn down to simmer. Now you can add the garlic, peppercorn, onions, and 3 teaspoons of vinegar to the broth. Cook half-covered for up to four hours, add additional boiling water to keep bones covered if evaporated during simmering. Skim surface to remove any impurities, don't stir.

Strain the broth thoroughly, then allow it to cool, then remove any fat that is still floating on the surface. Now is the time to prepare your celery, potatoes, carrots, parsley, and the tomatoes. Heat the broth, start adding the cut vegetables, simmer for one additional hour. Serve hot!
